Bio: Todd Appel
I have had many experiences in life working, traveling and
learning. I spent the majority of my professional career in
the pits of the Chicago Board of Trade. I have lived and
traveled extensively in Brazil. My formal education
includes an International MBA from the University of
South Carolina and a BA in History from the University of
Minnesota.

I am now on a completely different tack learning and
refining the craft of mixing spirits and coktails and
becoming a first class mixologist and bartender.

I took a summer long seminar in mixology sponsored by
Southern Wine and Spirits in Chicago in 2006 and led by
Master Mixologist, Bridget Albert. The seminar is a
prerequisite for membership in the US Bartender’s Guild,
which I am now a member. I have also taken several wine
seminars at the Academy of Wine and Beverage Service led
by Master Sommelier, Serafin Alvorado.

I currently work at the Crimson Lounge at the Hotel Sax in
Marina City in Chicago. I also have a private cocktail
catering and consulting company, Piranha Bros. Cocktail
Catering and Bar Planning and have consulted for Trump
Hotel Chicago, Absolut/Future Brands, Sauza Tequila,
Partida Tequila and others.

I have always been young for my age and stay in shape by
being an avid weight room rat. I love music in almost all
its forms and have an extensive collection of Bossa Nova
and other Brazilian music. I love cooking and use many of
the skills and ideas from those experiences in my way of
looking at crafting cocktails.

Two words that best describe my philosophy are “balance”
and “simplicity”
